About Me:
I was born and raised in Ecuador. In 1991, with the help of my parents, came to New York to live with my grandmother. It was here where I developed a true passion for food. My grandmother showed me all about true classic South American cuisine.
But I was eager to learn more. I decided to start working in kitchens as a dishwasher, working my way up to prep cook. Afterwards, I received my Culinary Degree at the International Culinary Center, formerly known as the French Culinary Institute.
I cook with heart and soul creating flavorful and satisfying dishes. My style of cooking tends to be Classic American with mediterranean influence, always showcasing flare from Spain, Greece, Italy and so on. I am also focused in locally sourced vegetables, fish and meats. I'm also a firm believer in an “all scratch kitchen”. One of my dishes, Bacon Wrapped Chicken, was featured on Celebrity Taste Makers, with Actor/Comedian Collin Quinn. I'm experienced in high Volume kitchens, always keeping my patience all the time. This is one of my strongest features. When I'm not working, I love watching movies with my family, or listening to good music.
